Wild Keto Pizza Bites

These wild keto pizza bites are a party smash! While these ketogenic pizza bites do not take long to make, they will disappear even quicker. If you love pizza and love the keto lifestyle, then these are for you. If you love pizza and just want to cut out the nasty needless carbs and grains, then these are for you!

Equipment needed

  • Mini muffin pan
  • Oven
  • Knife

Wild Keto Pizza Bite Ingredients

  • Pepperoni
  • Mozzarella balls
  • Tomato paste
  • Fresh basil
  • Pre-heat the oven to 400 degrees while prepping the wild keto pizza bites
  • Cut 3-4 small slits in the edges of the pepperoni so they form cups when pressed into the muffin pan
  • Place a pepperoni into the bottom of each cup of the muffin pan.
  • Place into oven for 5 minutes to allow pepperoni to crisp.
  • Remove muffin pan after 5 minutes and allow to cool for 5 minutes
  • Next place 1/2 teaspoon of tomato paste on the pepperoni and spread around.
  • Place 2-3 mozzarella balls into each muffin cup
  • Top with basil if so desired.
  • Place in oven for 5 minutes until cheese is melted.
  • Devour and enjoy!

Dress it up by topping it with extra pepperoni, sausage, beef, and spices as desired.

Keto Mashed Taters – Cauliflower

Keto mashed cauliflower

Growing up I enjoyed mashed taters several times a week. As a side and even sometimes as the main course.

The line at Tiller holiday gatherings dwindled quickly after Maw’s taters were gone! I don’t think anyone ever fought over them, but you were never forgiven if your eyes were bigger than your belly and you wasted them!

Potatoes are starchy (pretty much pure carbs) without a lot of nutrients. I appreciate how they can grow in terrible soil and keep folks alive during difficult times, but we are going for optimal here! So instead of potatoes, we are having mashed cauliflower.

We keep a ready stash of frozen cauliflower around here but always choose fresh if we can.

Ingredients

  • One bag of frozen cauliflower
  • One cup of broth
  • Slab of butter

Instructions

  • Add all ingredients to a saucepan
  • Cover and cook over medium heat until cauliflower is fork tender
  • Mash the cauliflower up.
  • Can use a fork but you get extra points if you use power tools!
  • Add butter and salt to your liking.
  • Add field garlic, onions, or chives as desired.
  • Top with bacon and serve as a side or devour in its standalone goodness!

The broth should fill ¼-⅓ of the pan. Bone broth is nutrient dense and adds great flavor but water can be used in place.

Wild Keto Fluffy Waffles

Wild keto fluffy waffles that wont make you fluffy!

These fluffy Keto waffles that are so simple to make that a 3-year-old can do it.

So there is no reason you can not enjoy these low carb keto waffles for breakfast, lunch, and dinner!

We made 3 big fluffy Belgian waffles and momma and I ended up splitting one because the offspring each devoured a whole one with no syrup needed!

Ingredients

  • Eggs – 5
  • Almond flour – ½ cup
  • Sweetener (granulated) – 4 tbsp
  • Baking powder – 1 tsp
  • Vanilla – 2 tsp
  • Heavy cream – 3 Tbsp
  • Butter – 5 Tbsp
  1. Separate eggs and whisk whites. Save the yolks!
  2. In separate bowl mix egg yolks, almond flour, sweetener, and baking powder.
  3. Slowly mix in melted butter.
  4. Mix in heavy cream and vanilla.
  5. Fold whites into mixture. Fold and mix in keeping air in the mixture to improve fluffiness.
  6. Pour into waffle maker and eagerly wait!
  7. Devour waffle!!!
  • Serving size: 1 Waffle
  • Fat: 33 g
  • Protein: 4 g
  • Total Carbs: 11 g
  • Net Carbs: 4 g
  • Fiber: 2 g
  • Sugar: 0 g
  • Saturated Fat: 16 g
  • Monounsaturated Fat: 0 g
  • Polyunsaturated Fat: 0 g

Keto Sausage Casserole

Ingredients

  • Sausage – One pound
  • Cream Cheese – 8 ounces
  • Shredded Cheese – 1 1/2 cups
  • Eggs – 8
  • Whipping Cream 1/4 cup
  • Salt – pinch
  • Pepper – pinch

Preparation

  • Preheat oven to 375 degrees
  • Brown sausage in skillet
  • Once brown add cream cheese. Mix and allow to melt.
  • Whisk eggs, whipping cream, salt, and pepper.
  • After sausage and cream cheese mixture becomes gooey, mix in one cup of shredded cheese and remove from heat.
  • Spread sausage mixture into 9×13 pan.
  • Pour eggs over sausage mixture.
  • Sprinkle remaining cheese on top.
  • Cook at 375 degrees for 20 minutes.
